Mexican Chilli Burgers

This is such an easy, tasty, and fairly healthy burger. Spice up a midweek meal favourite, or add some onion rings and fries for a weekend treat. With not much chopping and major prep these burgers can be whipped up in 5 minutes and on the table in 15. Serves 2
INGREDIENTS:
• 250g lean steak mince
• 1 tsp garlic powder
• 1 tsp hot chilli powder
• 1 tsp cumin
• 2 tbsp jalapeños
• 1/2 bunch coriander
• 1 tsp chipotle chilli flakes
• mexican chilli cheese
• shredded lettuce
• sliced tomato
• 1 tbsp mayo
• 2 brioche buns
METHOD:
* Place the mince, garlic powder, chilli powder, cumin, jalapeños, coriander and chilli flakes Into a blender
* Season the mix with salt and pepper and blitz until thorougly combined
* Take the mix, split in half and make into two patties
* Put a frying pan on a high heat and fry the patties for 4-5 minutes on each side, until the have a nice colour on them
* Grill your brioche buns until golden
* For the last two minutes of frying your burger, top with the cheese and allow to melt
* Spread the brioche bun with Mayo, top with the lettuce, then tomato (sprinkle with a little sea salt), add the burger and a few extra jalapeños if you wish. Also lovely with guacamole.
