Reece’s Peanut Butter Pancakes



This batch of pancake mix will do 4-6 people. I split mine into two, as I’m greedy and always want more than one type of topping, and half became peanut butter and caramelised banana pancakes and the other half plain with bacon and maple syrup. It’s up to you what you do!

Ingredients:


1lb self raising flour

6oz caster sugar

3 heaped tsps baking powder

1 pint of milk

3 eggs

3 ripe bananas

2-3 handfuls of Reece’s peanut butter chips

handful of chocolate chips (optional)

demerara sugar



METHOD:


•Take all the dry Ingredients and mix together

•Mix the eggs and milk together and then add to the bowl with the dry ingredients

•Leave to sit while you turn on your hob and place a pan on medium heat •Slice your bananas and put on a plate or tray and coat with a sprinkling of sugar

•Put a little oil or butter in the pan and ladel out your pancake mixure

•When bubbles start to appear, it’s time to flip your pancakes

•Cook for a further 3/4 minutes or until golden on the bottom side

•Place on a tray or plate and continue the process until you have used all of the batter

•Meanwhile as you cook the pancakes blowtorch, or grill your banana slices until golden and caramelised

•Top the pancakes with the bananas and a few extra sprinkles of chocolate or peanut butter chips if you wish. •Enjoy!!
